Grilled Chicken Bruschetta


Tonight my momma and I made grilled chicken bruschetta! I've been on the hunt for yummy recipes I can learn to take back to school with me. I saw this recipe on Pinterest a while back, but tonight we finally tried it out! It's so super easy so super tasty. Its healthy too~ one chicken breast = 200 calories!

We were cooking for a group of seven, so that's why
there's extra ingredients in the picture. 


Whatcha need:

-4 boneless skinless chicken breast halves
-1/2 cup of Sun Dried Tomato dressing
-2 tomatoes
-1/2 cup shredded mozzarella cheese
-1/4 cup of fresh basil or 1 tsp. of dried basil leaves





Step One. Marinate the chicken breasts in a resealable plastic bag using 1/4 cup of the sun dried tomato dressing. After sealing the bag, turn over the bag multiple times to make sure the chicken is evenly coated. Refrigerate for at least ten minutes. While that's doin' its thing, move to step two!

Step Two. Make the topping! Finely chop the tomatoes and basil, and mix it with the mozzarella and the rest of the sun dried tomato dressing.

 
Step Three. Now here's where we had to kinda modify things a bit. The recipe calls for cooking the chicken on an outside grill on top of heavy duty foil at a medium heat for about 6 minutes. Then you're supposed to flip them over, add the topping, and then cook for another 8 minutes, or until ready. However, seeing as though its like negative 2 degrees right now, an outside grill wasn't an option. Instead, we cooked the chicken on our George Foreman Grill for 6 minutes.

 

But because the grill cooks both sides of the chicken at once, after the 6 minutes, we placed the chicken on a baking dish, added the topping, and then put them in the oven for a fast broil {approx. 2 min}.

You're all done! Just add some yummy side dishes and you're good to go. :)
