Blueberry Oat Frittata

Alright guys. I made this for breakfast this morning, and it was delicious. Its essentially a blueberry pancake, but way healthier. The frittata (topping included) is roughly 300 calories, and only takes about 10 minutes to make. 


What you'll need:

Frittata
:1/4 cup of blueberries
:6 tablespoons egg whites (3-4 eggs)
:3 tablespoons of quick cooking oats

Topping
:organic maple syrup (can be substituted for honey or any other natural sweetener)
:1/2 cup of blueberries


For the Frittata
-Spray a 6-inch cooking pan with non-stick cooking spray and place over medium heat
-Sprinkle the oats on the bottom of the pan and shake them into a even layer
-Pour egg whites evenly over the oats, and then sprinkle a small handful of blueberries onto the frittata
-Place a lid on the pan and let cook undisturbed until egg whites begin to set on top (roughly 1-2 minutes)
-Flip the frittata, and let it continue cooking until egg whites are completely set (approx. 30 seconds)
-Remove from pan and serve!

For the Topping
-blend blueberries and syrup (sweeten to taste)
-warm in the microwave (10-15 seconds)
-once its added to the frittata, its ready to serve!

Mmm... So good. :) I think next time I'll have to try it with raspberries!
