S'mores Cookie Bars:: From Amanda

I also happen to be a baker so when Lauren asked me if I could guest post while she was away and mentioned maybe sharing a recipe, I quickly jumped at the chance! Since I spend a lot of my week baking different things, I found it hard to decide what to make. But then, I saw a lovely lady I follow on Tumblr talk about S'mores Cookie Bars and immediately I knew what I'd be making!
S'mores Cookie Bars are just essential for summer. There's always times where you just crave a s'more but a fire isn't possible. That's where these guys come in! They're easy peasy and messy so it doesn't matter if everything doesn't go exactly as planned in putting it in the pan or slicing them.
Make these and you certainly won't be sorry!
-1/2 cup butter, room temperature1/4 cup brown sugar-1/2 cup sugar
-1 large egg
-1 1/4 tsp vanilla extract
-1 1/3 cups all purpose flour
-2/3 cup graham cracker crumbs
-1 tsp baking powder
-1/4 tsp salt
-1-2 king-sized milk chocolate bars
-2 cups mini marshmallows
1. Preheat oven to 350°F. Grease an 8-inch square baking pan.
2. In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla. In a separate bowl, mix together flour, graham cracker crumbs, baking powder and salt. Add to creamed butter mixture and mix until combined.
3. Divide dough in half and press half of dough into an even layer on the bottom of the pan. Place chocolate bars over dough in pieces. Sprinkle marshmallows over chocolate. Place remaining dough in a single layer on top of the marshmallows. This is where it may get messy and you may not be able to cover the whole top. Don't worry about it!
4. Bake for 25 to 30 minutes, until lightly browned. Cool completely before cutting into bars.
